Cat Bite Club unveils new menu
Singapore’s The Cat Bite Club has launched a new cocktail menu to celebrate its first anniversary.
The new drinks list, which marks the biggest change since Cat Bite Club opened its doors in mid-2023, looks to reimagine classics through the lens of agave and rice spirits.
Menu highlights include a trio of related drinks comprised of the Invisible Gin, a Highball-style serve made up of Bombay Sapphire, ginger, pineapple, citrus blend, gentian, apricot and soda water; the Hulk Splash, featuring Ocho blanco Tequila, kiwi, citrus blend, Fernet Hunter, granit and roasted broccoli; and the Return of the Mak, which brings together Korean rice wine, Makgeolli and Tokki soju, with Amontillado Sherry, persimmon, hazelnut and citrus blend.
The bar has also added a ‘new classic’ cocktail, called the Little Italy, made with Michter’s rye whiskey, Cynar, Cinzano Rosso 1757 vermouth and Scrappy’s orange bitters, and an Old Fashioned-inspired Ode to Ada, created with Montelobos Espadín Joven mezcal, Tepeztate mezcal, amari, apricot and Cinzano Rosso 1757 vermouth.
The team have also made a rice version of the cocktail called Sippin’ Shrooms, created with pisco, Hachi Kokuto, shiitake-infused Sherry, umeshu, sesame, amaro, and celery bitters.
The bar claims to hold the largest collection of agave spirits in Singapore, with more than 200 bottles to try.
The bar’s classic agave cocktails include the Paloma, Mezcal Negroni and Oaxacan Old Fashioned, while the bar’s Espresso Martini section has seen an update. New drinks here include the Meow Now Brown Cow – an agave serve shaken up with Espolon añejo Tequila, Mr Black Coffee Liqueur, banana cordial, vanilla cream, Sherry, aromatic bitters and salt.
Cat Bite Club fans will also be pleased to see the continuation of the rotating milk punch, with a portion of sales donated to local cat charities. The signature serves, the Cat Bite Margarita and Soju Sprint, will also stay on the menu as introductions to agave and rice spirits.
The Cat Bite Club was opened by long-time friends Jesse Vida (former head bartender at Atlas) and Gabriel Lowe (ex-bar manager of Paradise Lost in Bangkok).
It was nominated for Best New International Cocktail Bar – Asia Pacific (APAC) at the 2024 Spirited Awards.
The bar is located behind a secret entrance at 75 Duxton Rd, Singapore.
