Maybe Group opens Bar Allora in Sydney

Situated in downtown Sydney, Bar Allora is described as a ‘slice of 1980s Italy’, and offers a pandan and pineapple-laced Negroni among its cocktails.

Bar Allora is the first joint venture between Australian hospitality company The Maybe Group and Table From, hospitality group Accor’s dedicated in-house food and beverage group.

The Maybe Group is behind the likes of award-winning Sydney venue Maybe Sammy, and Mexican-inspired El Primo Sanchez.

Bar Allora is an all-day Italian bar and restaurant, which transitions from morning espressos and paninis from the counter at lunch, to aperitivos, small plates and cocktails once the evening hits.

Vince Lombardo, co-founder and director of The Maybe Group, said: “Ten years on from opening Maybe Frank, we wanted to return to our roots with a true Italian experience.

“Bar Allora captures the energy, culture and connection at the heart of Italian hospitality, authentic flavours delivered with a joyful, modern twist. Every detail has been designed to feel vibrant, welcoming and unmistakably Italian.”

The venue’s interior is described as a ‘love letter to 1980s Milan’, with neon accents, terrazzo floors and mirrored brass.

Paired with the venue’s small plates offering is the bar’s take on aperitivo classics, such as the Americaniello, made with Campari, Oscar Rosso vermouth, lemon myrtle liqueur, and mango soda water, and the Allora Negroni – a combination of gin, Campari, oloroso Sherry, pandan and pineapple.

Cocktails celebrate the art of aperitivo

The bar will also play host to an aperitivo hour from 4-6pm from Tuesday to Saturday.

Away from aperitivo, the cocktail list is tailored for indulgence, with a Pistachio Grasshopper and a brandy-spiked Shakerato.

“We’re thrilled to launch Bar Allora in partnership with The Maybe Group,” added Ben Creek, head of Table For. “This collaboration represents the future of Table For – visionary hospitality partners creating culturally relevant, beautifully executed, guest-led experiences. Bar Allora is just the beginning.”

Bar Allora can be found on the corner of George and Bond Street in Sydney’s Central Business District.

In September, The Maybe Group moved its Mexican-inspired venue El Primo Sanchez into Four Pillars’ laboratory in Surry Hills.

Earlier in the year, the group brought its Maybe Cocktail Festival back to Sydney and also opened another bar in the city, Little Cooler.
