Widow Jane finishes Bourbon in Greek oak

Heaven Hill Brands-owned Widow Jane Bourbon has unveiled the seventh limited edition in The Vaults series, which was finished in ‘mythological oak’.

The Vault series is dedicated to unique wood finishes and is part of the distillery’s annual limited releases.

Sienna Jevremov, head distiller at Widow Jane, said: “Each edition of The Vaults is a thrilling experience for me. It affords me the opportunity to explore the enigmatic flavours of our older whiskey stocks and to craft a composition woven together into something entirely new.”

Previous releases in the series include whiskeys finished in Brazilian amburana oak and chinquapin oak.

Jevremov continued: “For 2025, I chose Greek oak as the finishing wood, having been inspired by my many journeys to the region. Walking among its landscapes, the aromas have lingered with me ever since – haunting me in the most delightful way.”

The 2025 edition is a blend of 15-year-old Bourbons that have undergone secondary maturation in casks made from oak harvested from the ancient forests around Amfilochia, a mountainous city on the Mediterranean coast of Greece.

The wood used in barrel assembly is air-seasoned for one to two years, said to impart notes of wild honey, mountain sage, and dried fig to the resulting whiskey.

Offered at 49.5% ABV, The Vaults 2025 displays notes of dark mulled fruit, burnt sugar, salty olive oil pastries, and forest aromatics, complemented by floral and citrus nuances.

Michele Clark, vice president of Widow Jane, added: “This year, we turned to mythological oak, a gift from one of the world’s most fertile and storied landscapes.

“Nurtured by the Mediterranean sun and sea, these ancient oaks embody the essence of their terroir. In choosing them, we sought not only to honour tradition but to forge new ground – creating a spirit of uncommon depth, layered with rare complexity, and worthy of its timeless origins.”

The 2025 release is limited to 15,672 bottles (2,612 cases of six 750ml bottles) nationwide in the US, with a suggested retail price of US$249.99.

Brooklyn-based Widow Jane has been part of Heaven Hill Brands’ portfolio since February 2022, when the company acquired Samson & Surrey.
