Mucho Group to open Negroni bar in Sydney

The team behind Sydney Tequila bars Cantina OK and Centro 86 have turned away from agave for their latest project.

Herbs Taverne will be located on Clarence Street, in the Sydney CBD, and is set to open its doors on 3 May.

Unlike the group’s other venues in Sydney – Cantina OK, Centro 86 and Tio’s Cerveceria – which push agave spirits, Herbs Taverne will spotlight aperitifs and digestifs in a menu centred around the Negroni.

The idea is to bring a fresh perspective on bitter drinks – ‘in a bar that feels like it’s been there forever, but couldn’t have existed until now’, the group said.

As with its other Sydney venues, Herbs Taverne will ‘emphasise fun’, with a goal to ‘push past pretty good and into the psychedelic’.

The menu will feature 12 core drinks with a monthly Spritz special. The core serves will include three Negroni riffs, three aperitifs, three house-blended digestifs and three original cocktails.

Guests can expect classic European drinking traditions filtered through ‘Sydney’s eclectic flavour pantry, from Polish delis to Chinese grocers’.

Jeremy Blackmore, creative director at Mucho group, said: “Each drink is built to be purely delicious but also surprising.

“They each have something unexpected, from pairing amaro with parsley, or gentian with passionfruit, even pairing Calvados and Żubrówka. Sometimes these combinations are more than the sum of their parts. It’s these combinations we’re looking for.”

Herbs Taverne will be open seven nights a week, from 4pm to 2am.
