Situated at The Arches in East Market Street, the ‘state-of-the-art’ distillery will be the sole production site of Edinburgh Gin.

The development has retained various features, such as the arches and exposed brickwork, while incorporating new additions, including floor-to-ceiling windows, a roof terrace, a bar and two 2,000-litre bespoke copper stills.

“This launch is a true milestone for the brand, representing our relentless dedication to innovation and excellence in all things gin,” said Finlay Nicol, distillery manager at Edinburgh Gin.

“We believe this is more than just a distillery – it’s a testament of our rich heritage, knowledge and commitment to sustainability, and our brand new stills alone are an embodiment of this.”

In addition to the two stills – named Annie and Lina, after the first female gardeners to work at the Royal Botanical Gardens Edinburgh in 1897 – there is a third, smaller, experimental still, called Matilda.

The new distillery will be powered by 100% renewable electricity.

Visitors will be able to take part in four immersive experiences at the distillery, such as the Classic Tour and Tasting, and The Gin Making Experience.

Melissa Rickerby, brand homes manager for Edinburgh Gin, said: “We’ve crafted unforgettable programmes for the new distillery, which are as expertly curated as our spirits, so we can’t wait for visitors to experience them.

“These new experiences offer a deep dive into the intricate art and science of gin making, led by passionate experts who bring every detail of our process to life, offering a truly immersive journey through the world of gin.”

Earlier this year, Edinburgh Gin opened its first airport boutique in collaboration with global travel retailer Avolta.
