Salvatore Calabrese taps into déjà vu for new menu

Velvet by Salvatore Calabrese, the cocktail bar at the Corinthia London, has introduced a new drinks list called Echoes of Memory.

The menu is the final chapter in a trilogy, following The Quote Book and The Pixel Book.

The list explores how flavours, aromas and textures evoke memory, with each cocktail designed to transport the drinker to a specific moment or place.

Cocktails are divided into four themes: Recollection, Elsewhere, Touch & Feel and Déjà Vu.

The Recollection section features Bake Me Up, described as ‘toasted, nutty and buttery’ and inspired by the memory of a Parisian bakery. The drink blends Altamura Vodka, croissant, vanilla, Oolong tea kombucha and vintage Champagne.

Meanwhile, from the Elsewhere section, guests can sample the Sakura Horizon, made with Hibiki Harmony, sesame oil, a shochu blend, Americano Bianco, Mancino Sakura, bentonite clay and orange bitters.

Similarly, Xenia’s Pillar aims to transport guests to Greece through its use of Siete Misterios Doba-Yej, Acqua Bianca, Greek mastiha, watermelon and feta cheese.

From the Touch & Feel section, In The Weeds is a ‘grassy, crisp and botanical’ concoction featuring Roku gin, cucumber water, lemongrass cordial, wheatgrass, banana leaf and acacia honey.

The final section, Déjà Vu, concludes with Duality, which combines Michter’s US 1 Small Batch Bourbon, Michter’s Straight Rye, sage, pear, tonka and pimento bitters.

The menu also features a selection of Salvatore’s Masterpieces, including the Martini method he developed in the 1980s and the world-famous Breakfast Martini.

Guests can also enjoy a range of cocktails made with vintage spirits, such as a Rob Roy made with 1980s Johnnie Walker, 70s Martini Rosso and 50s Angostura Bitters.
