Eden Mill reveals single cask series
Independent Scottish distiller Eden Mill has launched a new single cask series, with the first release exclusively matured in an ex-Pedro Ximénez (PX) cask.
The inaugural release was distilled in January 2016 and aged for almost nine years in a PX Sherry cask.
Offered at a cask strength of 58.3% ABV, the palate boasts sweet notes of figs, raisins, oak and red berries.
Commenting on the release, Scott Ferguson, head distiller at Eden Mill, said: “The entire team was blown away by the quality of this single malt. It’s got a very deep, rich colour thanks to the PX cask. Exclusive maturation in this cask type creates a truly special whisky. It is the dream dram for those who love heavily Sherried whiskies – sticky, sweet and warming – ideally enjoyed around a fire on a cold night this festive season.”
The single cask release is limited to 252 bottles and is available from 21 November only on the distillery’s website and at the brand’s shop in St Andrews for £110 (US$139).
In an update from the distillery a day after the launch, the PX single cask had sold out in less than 24 hours.
Eden Mill Distillery was established in 2012 on the banks of the Eden Estuary in St Andrews and was the first distillery to make spirits in the region in more than 150 years.
It offers a selection of limited release single malts and an extensive gin portfolio.
Eden Mill’s new distillery is located just seven minutes from St Andrews and is set to commence distillation in early 2025 before opening its doors to the public in spring.
Last month, the distillery partnered with biotech company MiAlgae to repurpose whisky effluent, a by-product of distillation.
Earlier this year, Eden Mill unveiled its annual release in The Art of St Andrews whisky series.
