Yann Bouvignies to leave Scarfes Bar

The head of mixology at Scarfes Bar in the Rosewood London hotel, Yann Bouvignies, will leave his post today (25 January).

Bouvignies, who joined Scarfes in 2016 and took over the role from Greg Almeida in 2018, will head to Amsterdam, in the Netherlands, to oversee the opening of the Rosewood Hotel’s new bar in the city as director of bars.

He will join the team there on 1 March.

“Being a part of the Scarfes Bar team for the past eight years has been an absolute honour,” said Bouvignies.

“From working with the incredible Scarfes Bar team alongside our European area director of bars Martin Siska, to spearheading the creative cocktail programme as the head of mixology, there has been too many special memories to count.

“This was a momentous year; we celebrated our 10th anniversary and launched our new menu, 10, which took Scarfes Bar on a global tour.

“I look forward to seeing the continued success of Scarfes Bar and the team! I’m leaving Scarfes Bar, but Scarfes Bar will never leave me!”

Under Bouvignies’ leadership and over the course of his eight-year stay, Scarfes has been consistently nominated for Tales of the Cocktail’s (TOTC) Spirited Awards, and won Best International Hotel Bar in 2020.

Bouvignies also helped the bar’s cocktail programme pursue its commitment to zero waste.

Together with the Rosewood’s director of bars, Martin Siska, he launched six cocktail menus, most recently an anniversary menu, called 10,  to celebrate the Scarfes’ 10th birthday. The drinks list was made up of guest favourites from years gone by, plus 10 new serves that aimed to marry minimalism with innovative flavours and modern technologies.

Bouvignies grew up in the South of France where his first roles in the industry took him to Hôtel Le Kaïla in Méribel, and La Résidence de la Pinède Hotel in Saint Tropez.

During his tenure with the Rosewood hotel chain, Bouvignies has helped the Rosewood Hotel group open a bar in the Rosewood Le Guanahani in St Barth, as well as assist international training at Rosewood Hotels in Paris and Nassau.
