In the Welsh Wind debut casks sell out
Ceredigion-based distillery In the Welsh Wind has sold out its inaugural release of 30-litre casks.
The distillery, located on the west Wales coast, uses locally grown barley and unkilned malt to produce the new-make spirit, which will become a single malt whisky.
The casks were made available to allow people to own an early portion of the 100% Welsh single malt whisky.
The distillery will now turn its attention to bottling the spirit. For these, whisky drinkers will need to wait until late spring 2024, which is the expected release date for the first drop of limited edition bottles.
Co-owner and director of In the Welsh Wind, Ellen Wakelam, said: “To have sold out of our 30-litre casks is a massive achievement for us. We are hugely grateful that so many people have seen the excitement in what we are doing and have trusted us in this way.”
Buyers of the casks were able to choose their cask seasoning from a selection of 10, ranging from traditional finishes, such as red wine and Sherry, to the more experimental, such as Tequila.
Wakelam added: “We had the idea to sell casks of our new-make liquid as a way to allow people to join us on our journey to a Welsh origin whisky. Our whisky sits firmly within the single malt Welsh whisky PGI status that was announced earlier this year.
“The processes we’ve developed over the past couple of years ensure all aspects of production take place here in Wales and reduce the amount of energy we use in our own whisky production.
“Research with the Open University suggests that the combination of local barley and on-site malting gives our whisky a flavour profile unique to south Ceredigion.”
In July, single malt Welsh whisky was successfully registered under the UK Geographical Indication (UK GI) scheme, with In the Welsh Wind joining Penderyn, Da Mhile and Coles as part of the final application. The scheme protects name, authenticity and characteristics.
In the Welsh Wind received approval for a multimillion-pound expansion to its distillery in 2021, which enabled it to develop its whisky. It was previously located in a cowshed of the Gogerddan Arms pub, on a main road in Aberystwyth.
Also a producer of gin and rum, the distillery has previously partnered with Danish distributor Bemakers to grow its brand in Europe.
