Copperworks launches IPA Cask Finished gin

Seattle-based Copperworks Distilling has joined forces with Elliott Bay Brewing Company to release 251 bottles of an IPA cask-finished gin.

In 2017, Copperworks emptied a barrel of Copperworks New Oak Cask Finished Gin and handed the barrel over to Elliott Bay Brewing, also located in Seattle.

The brewpub chain then filled the cask with beer to create a barrel-aged version of its Demolition IPA.

The barrel was then returned to the team at Copperworks who filled the barrel with gin, which was left to rest for almost a year, resulting in Copperworks IPA Cask Finished Gin.

The limited edition expression is said to have notes of lemon balm, citrus hard candy, eucalyptus, peppermint and bitter hop notes.

Bottled at 50% abv, the gin is available from the Copperworks tasting room and via the distillery’s online store at an RRP of US$49.95 per 750ml.

Jason Parker, Copperworks co-founder and president, said: “The botanicals in our malt-based gin provided flavours in the barrel that enhanced [Elliott Bay Brewing’s] organic malt-based Demolition IPA, which in turn flavoured the barrel with great citrus and spice notes for the second gin we aged in it.”
