Duck & Waffle unveils veggie-inspired cocktail menu

Leading London bar Duck & Waffle is marking National Vegetarian Week with the launch of a veggie-inspired cocktail menu, called Drink Your Greens.

The Caramelised Red Onion Manhattan is on the Drink Your Greens menu

Created by Rich Woods, head of cocktail and spirit development, the Drink Your Greens menu features 10 drinks with a vegetable twist.

The menu includes an Artichoke Negroni, made with Bombay Sapphire Gin, Campari, Martini Vermouth blend and artichoke distillate; and a Martini-style Green Gimlet, a combination of Fords Gin, tomato vine and green leaf distillate, and ‘green’ cordial.

Also on the menu is a Red Pepper Spritz, made with Russian Standard Vodka, blanched red pepper skin, Noilly Prat Dry Vermouth, red pepper cordial and topped with Prosecco.

“The mighty vegetable is long overlooked as a more than suitable replacement to fruit in many a classic cocktail,” said Woods.

“Naturally sweet, nourishing and enriching – not to mention they are damn tasty. For National Vegetarian Week I wanted to celebrate all that is great about some of our loved (and not so loved) garden particulars and shine a light on their versatility in some of my favourite alcoholic and non-alcoholic cocktails.”

In addition to the cocktails, the sky-high bar and restaurant has created a curried cauliflower waffle, topped with tamarind, paneer, pickled dates and curried scraps.

The Drink Your Greens menu is available during National Vegetarian Week (14-20 May).

Avocado Aperitivo

Served neat and over a frozen avocado stone.

Ingredients: Tequila Cabeza, avocado and cacao liqueur, dry bitters, amaro

Pina Kale ADA

Served long, tropical and fresh (also available as a non-alcoholic alternative)
Ingredients: Bacardi Carta Blanca Rum, clarified pineapple, toasted coconut, kale

Heritage Carrot

Roasted heritage carrots and caramelised walnuts – paired with Scotch.
Ingredients: Monkey Shoulder Scotch whisky, walnut, clarified heritage carrot, burnt honey

Caramelised Red Onion Manhattan

Stirred well and served ‘up’. A-la-Manhattan.

Ingredients: Woodford Reserve Bourbon, sweet vermouth, sage distillate, caramelised red onion, roasting bitters

Beetroot and Cacao Royale

A rich and vegetal riff on the classic Kir
Ingredients: Beetroot and cacao liqueur, topped up with bubbles
