Irish whiskey producer West Cork Distillers has released a collection of three 12-year-old single malts in the US, aged in former Sherry, rum and Port casks.

The range is crafted from West Cork 12-Year Old Single Malt, which is made from 100% Irish malted barley and cut with spring water from a river by the Skibbereen-based distillery.

The whiskey – which is non-chill filtered and contains no added caramel – is first aged in first-fill Kentucky Bourbon casks for 12 years, before it is split into Sherry, rum or Port casks and aged for a further 6-12 months.

Each cask is hand-selected by master distiller, Frank McHardy: the rum casks hail from the West Indies, the Sherry are from Andalusia in Spain, and the Port cask is of the Douro Superior  style.

West Cork 12 Year Old Cask Finish Collection retails at US$65.99, and each individual whiskey – of which only 2,500 bottles will be made available – is bottled at 43% abv.

In July, Halewood International acquired a “significant stake” in West Cork in a bid to expand its footprint in the Irish whiskey category.
