Tayēr + Elementary finds temporary home in Cato’s basement

Following a fire at the original site, London’s Tayēr + Elementary will host a six-week residency in the basement of the city’s Cato bar.

The residency is part of a new concept series called ‘What If’?, which reimagines different themes through a Tayēr lens.

The Cato residency is titled Casual by Tayēr and explores how the brand can pair the ‘vibrant, welcoming character of a casual classic bar’ with the ‘inventive, flavour‑driven approach’ for which it is known.

Co‑founders Alex Kratena and Monica Berg will launch the pop-up tomorrow (15 July), with the residency to end on 26 August.

The curated menu of cocktails will combine the distinctive styles of both Tayēr and Elementary, with cult classics such as the One Sip Martini also on offer.

Head chef Steven Diaz has also created a menu of cross-cultural snacks, skewers, sandwiches and hot plates representative of his signature style of Latin and Asian influences and nostalgic drinking comfort food. These include green plantain crisps with rayu, watermelon and shiso gildas and Cubano sandwiches.

Berg said: “Casual by Tayēr is our way of staying connected to the people who have supported us, even as we navigate an unexpected moment of change.

“This residency gives us the freedom to be playful, responsive, and a little spontaneous to create something that feels fresh while still rooted in the values that define Tayēr + Elementary.

“Summer in London is all about embracing the moment, and Casual by Tayēr is exactly that: a chance to come together, enjoy great drinks, and celebrate the community that makes our work meaningful.”

Cato opened in London’s Covent Garden in February. The bar was the first venture from Angelos Bafas following his departure from the Creative Restaurant Group.

Bafas added: “We’re incredibly excited to welcome Monica, Alex and the Tayēr + Elementary team to Cato this summer.

“They are among the most respected names in the global cocktail community, and it’s a privilege to host the first edition of their new ‘What If?’ series.

“Casual by Tayēr is a fantastic fit for our basement bar, and we’re looking forward to welcoming both loyal Tayēr guests and new visitors to experience this unique residency in the heart of Covent Garden.”
