Cocktail bar Nancy’s to open in London Bridge

Located within the Brutalist egg-box-style Colechurch House building in London Bridge, the bar is said to embody the soul of a glamorous 1970s party through maximalist interiors, a tableside ‘lady luck’ Negroni cart, regular DJs, and live acoustic sessions.
The space is fitted with plush banquette sofas and chromatic floor lamps, alongside a private tiger-print pool room, disco-ball dance floor, and sweeping views of the London skyline.
Nancy’s general manager, Max Wolff, has returned to London after serving as lead bartender at Library by the Sea in Grand Cayman. The venue was the recipient of Best Bar in the Caribbean at North America’s 50 Best Bars 2025.
Former Swift bartender, Martha May Markham, leads Nancy’s bar team, having recently won Pernod Ricard UK’s Bar Queens competition.
The pair have created a menu which has a market-to-glass concept. The menu draws from the neighbouring Southeast London area, including produce from nearby Borough Market.
Guests will find serves such as a Dirty Martini made with a brine blend from Borough olives, oloroso Sherry, Belvedere vodka, and served with a gilda-style garnish.
Other standouts see the Queen’s Walk, which is inspired by dessert shop Humble Crumble’s blueberry pudding. The serve mirrors the pudding with blueberry juice, malt syrup, Jameson Black Barrel, vanilla, and cinnamon, and is topped with a soft-serve custard.
The menu also features a spiced sour called Anko from Markham, who created the cocktail with spiced carrot syrup, bell pepper juice, Gochujang distillate, and Toki whisky.

Elsewhere, the menu includes a Nancy’s ‘lady luck’ Negroni cart, which is presented to guests tableside, who then roll a dice to choose from six distinct serves.
These include The Classic (Plymouth Gin, Campari and Mancini Sweet Vermouth), which is elevated with leather perfume in a nod to the area’s tanning heritage, and The Chocolate (Blanche d’Armagnac, Cocchi Torino, Bitter Rosso, cacao distillate and Mexican mole bitter), which is served with So Chocolicious’ orange chocolate truffle.
The programme also offers three ‘small sip cocktails’ that riff on classics.
From this section, guests can try a Cachaça-based Clover Club twist called the Corsica, made with raspberry, lemon cordial, and Lillet Rose.
An Hourglass small sip serve is described as a ‘sharp yuzu Appletini’ made with Tanqueray, Lillet Blanc, lemon cordial, and Manzana Verde and Yuzushu liqueurs.
Nancy’s will soft-open from 19 May (Tuesday) and officially open with the full menu from 1 June.
It is located on the fourth floor of Colechurch House, on London Bridge Walk.
