Mucho Group opens Bar Bridge in Sydney
By Rupert HohwielerSydney’s newest venue from Mucho Group, Bar Bridge, offers extra-dry Martinis and is inspired by classic European cocktail bars.

Mucho Group is behind several cocktail venues in Sydney, including Bar Planet, agave bars Cantina OK and Centro 86, and, most recently, Herbs Taverne.
Bar Bridge is described as ‘a classic Martini bar for modern Sydney’.
The group’s creative director, Jeremy Blackmore, said: “At Bar Bridge, we are searching for drinks that are electric. When two or three really bold flavours sing in harmony, the drink jumps out of the glass.
“Think of an extra-dry Martini made with a bold, expressive gin. The chill of the spirit with the shock of juniper is one of those iconic moments.”
The venue takes after classic European bars, cinema and design. The space’s low-lit and intimate atmosphere is supplemented with candles and red leather booths, while its interior is designed to give the feeling of a bar that ‘might exist somewhere between Sydney, Paris and New York’.
The cocktail menu is headlined by three extra-dry Martinis: The Bridge Martini, Citron Martini, and the Kimchi Martini.
The Bridge is a take on the Vesper Martini, made with the group’s seasonal vodka, London Dry gin, and a house-made, freeze-concentrated Australian brut, which replaces vermouth.

The Citron Martini combines yuzu gin and citron vodka with sweet orange notes of Lillet Blanc, while the savoury Kimchi Martini uses an oyster shell gin, kimchi seasoning and the team’s hand-foraged seaweed vodka.
There is also a monthly-rotating Martini special, which is a Passion fruit Creme Martini for April.
In addition to the Martinis, there are five signature cocktails. These include the bright pink Concorde, described as a Margarita-style sour with Calvados, raspberry eau de vie, lime and sumac, and The Highlight, which combines vodka with dessert wine, honeydew, and genmaicha soda.
Furthermore, a ‘crisp, green’ cocktail called the Pippin pairs Tequila with cucumber and sour apple.
Mucho Group’s signature complimentary popcorn bar snack can be found too, with Bar Bridge’s iteration coming in sweet-and-salty nori seaweed form.
Mucho Group CEO Daisy Tulley said: “The cocktails are excellent; the new popcorn flavour is my favourite yet, we have selected an inspiring team – we all feel very positive.
