Angelita fuses Prosecco with Negroni powder
As it celebrates its 10th anniversary, Madrid bar Angelita has launched a cocktail menu, titled Raíces, which features a Dry Sbagliato made with a Negroni powder.

The name ‘Raíces’ translates to roots, which follows Angelita’s focus on land, natural products and sustainable practices.
The new menu employs techniques such as precise temperature control, with serves made from a dedicated range of house-made spirits and soft drinks. The bar eliminates ice from cocktail creation, instead using dilution as a core ingredient.
Furthermore, ingredients sourced directly from the venue’s garden are also integrated.
The new menu consists of 14 cocktails. As well as the Dry Sbagliato, highlights include the La Huerta, which is made with Bombay Sapphire gin, garden vegetables and roots.
Another drink, named Resina Y Sombra, combines The Lost Explorer salmiana mezcal with pine, black lemon and chanterelle mushrooms. The Chitina features Brugal 1888 rum with crickets, fig leaf and barley.
Co-founder Mario Villalón said: “Raíces is a tribute to our own garden and a specific philosophy of drinking. This cocktail bar emphasises the natural depth of ingredients and technical precision, focusing on produce.
“While it pays homage to global gastronomy, Raíces doesn’t simply turn dishes into drinks. Instead, it engages with the core essence of cooking – applying transformation techniques, stocks, fats, ferments, and sensory structures – to the glass with both respect and coherence.”
Angelita was founded by the Villalón brothers, David and Mario, and is located in Madrid’s Chueca neighbourhood.
Along with the cocktail bar in the basement, the venue houses a wine bar and restaurant on its upper floor.
In 2024, the venue received a complete interior redesign under the direction of architects Gonzalo Goena and Oliver Sancho. Its design is described as having the ‘the raw aesthetic of a cave’ with the bar itself an ‘open laboratory’ in full view of guests.
Angelita was nominated for Best International Restaurant Bar at the 2025 Spirited Awards.
