Cat Bite Club doubles down on agave and rice spirits
By Lauren BowesThe new menu at Singapore’s Cat Bite Club continues the bar’s mission to celebrate and educate on both agave and rice spirits.

In 2024, the bar released a menu based on classic cocktails, with guests able to choose between the traditional serve, an agave-based version, or one made with rice spirits.
The new menu continues this focus on agave and rice spirits, with a section dedicated to each. The signature cocktails for each category, the Cat Bite Margarita and the Soju Sprint, remain at the forefront of their sections.
New additions to the menu include Get The MSG?, which featured in the January 2025 issue of The Spirits Business magazine. The cocktail features chilli oil-washed Cupreata Mezcal, Szechuan peppercorn tomato cordial, peach and fresh citrus, served with a beer float.
The Smoking Apple, meanwhile, combines The Lost Explorer Tobala Mezcal, Koch Elemental Espadin Mezcal, Calvados, apple butter, sweet vermouth and Peychaud’s Bitters.
On the rice spirits side, Ube Noir is made with Luzhao LaJiao Baijiu, Ron Zacapa Rum, black sesame, ube-coconut cream, Amontillado Sherry, Aperol and rose water, while the Straight Outta Scallion features Tumugi koji spirit, black garlic, scallion oil, green walnut, Drambuie, and lime bitters.
The third section is based on classic cocktails, including the New York Sour, Zombie and Espresso Martini.

The menu concludes with House Faves, which includes Meow Now Brown Cow, kept from the previous edition.
With the new menu, guests can order a neat pour of a cocktail’s base spirit alongside the serve for SGD$10 (US$8).
“Our previous menus were built around classics, which was a way we could introduce people to different agave and rice spirits in a familiar format,” said head bartender Erika Danielle. “This new format continues our mission to educate on these spirit categories, inviting curiosity and interest in the base spirit used in each drink.”
To help guide guests who may be unfamiliar with certain ingredients, the menu features illustrations of each drink’s glassware, tasting notes and ABV.
Beyond cocktails, Cat Bite Club offers Singapore’s ‘largest’ collection of Mexican and Asian spirits, with guests able to log anything they sample in the new Spirits Explorer Passport.
As the passport is filled out, guests can earn prizes as each category is completed. Those who fill all 50 slots will get 10% off all spirits for life.
