Maura Lawrence Milia joins Eagle Bar at Chancery Rosewood
By Rupert HohwielerThe former bar manager at the Connaught Bar, Maura Lawrence Milia, has revealed her next move after returning to London from Mexico.

Lawrence Milia left London for Mexico in late 2024. With her husband Alex, she helped co-found Outline and Café Arixi in Mexico City and Copal in Oaxaca.
The Lawrence Milias returned to London in late 2025, with Alex revealing to The Spirits Business that: “The bottom line of it is that we were not culturally aligned with how the business was being conducted and the communication was being done.”
Lawrence Milia has now joined The Chancery Rosewood hotel in Mayfair as general manager of the Eagle Bar, which is located on the hotel’s rooftop.
As general manager, she will work closely with the hotel’s director of bars, Liana Oster, overseeing day-to-day operations, team leadership and guest experience.
The drinks menu at Eagle Bar is said to ‘balance technical precision with narrative-led serves’ and is supported by elevated bar snacks and a wine and spirits programme with an American focus.
Lawrence Milia’s hospitality career includes 10 years at The Connaught, where she worked her way up to bar manager.
In other recent London bar news, the head bartender at The Savoy’s American Bar, Angelo Sparvoli, left his post and teased the launch of a consultancy partnership.
