Niseko Confidential revamps for summer
By Lauren BowesHolly Graham’s Niseko Confidential will reopen its doors on 2 July for summer following a successful first ski season.

The pop-up bar is the ‘frosty’ sister of Tokyo Confidential and first launched in December 2024.
Located by the main ski runs in Hirafu, the bar will now open for its first ‘green season’, with the area popular for hiking, zip-lining, mountain biking and other outdoor activities.
For summer, Niseko Confidential has moved away from prix fixe dining menus and après ski cocktails, instead expanding its à la carte offering and seasonal drinks menu.
Summer sips include the Blueberry Smash, made with shochu, blueberry, elderflower, mint and citrus. Other options include the Spring Garden, featuring gin, basil, verde amaro, sake, lychee and soda.

Those who visited during the winter will be relieved to hear favourites such as the Gingerbread Old Fashioned and Tokyo Banana Colada will return.
Tokyo Confidential’s two signature sakes, Funky Town and Butter Up, will also be on offer. These are created in collaboration with Katō Kahachirō Shuzō brewery, Yamagata.
In terms of food, Niseko Confidential’s new light bites include summer vegetable gazpacho, spicy scallop crispy rice and Wagyu beef tacos. For a main, guests can opt for pan-fried salmon with charred corn salad and couscous or a Hokkaido Wagyu fillet.
