ECC owner opens American Bar in Paris
By Rupert HohwielerExperimental Group, which is behind the Experimental Cocktail Club (ECC), has opened American Bar in Paris’ Le Marais neighbourhood.

The bar can be found inside the French capital’s newly opened Experimental Marais, the group’s luxury hotel.
American Bar is inspired by classic New York cocktail haunts and its drink list takes on their ‘timeless’ serves, as well as staples from the group’s ECC venues.
Divided between two sections, the NYC Tribute part of the menu presents signatures from well-known bars in Manhattan such as Please Don’t Tell, The Raines Law Room, Attaboy and Milk & Honey.
Those who have been to Please Don’t Tell will recognise The Benton’s Old Fashioned, which is made here with Four Roses Bourbon, Benton’s bacon fat wash, maple syrup and Angostura bitters. Meanwhile, Attaboy regulars will be familiar with the Pencillin, originally created by its founder Sam Ross, and Milk & Honey fans can try its Whisky Sour riff once more, which combines Compass Box Whisky, lemon juice, honey syrup and fresh ginger syrup, plus a 10-year-old Laphroaig float.
The other side of the menu brings back old favourites from Experimental’s past venues, from London to Paris, Venice and New York.
Experimental classics include The Expedition, which is dubbed a ‘curious blend of sweet and savoury’ and combines Plymouth Gin, pandan, passion fruit and zaatar, and the Mysterious Traveller, described as a ‘rich spirit-led drink’ with homemade vermouths, Bénédictine, Pierre Ferrand Cognac and cocoa-infused fino Sherry.
Cocktails from the group’s recently reopened bar in Soho, New York, have found their way to Paris, too.
Guests can try the Flat Iron, made with Tequila Ocho, mango, manzanilla Sherry and chipotle salt, and The Old Cuban, which features a blend of Havana Club three-year-old rum, ginger cordial, sugar syrup, lime juice, fresh mint, Angostura bitters and Champagne.
Classics can be also ordered off menu.
