Spirit of Yorkshire launches fourth single malt whisky

The Spirit of Yorkshire Distillery has released its fourth single malt whisky, an expression finished in Rioja wine casks.

The new Filey Bay STR Finish follows the release of the first and second batch of the English distillery’s inaugural single malt, and its first Sherry cask-finished whisky.

David Thompson, co-founder of Spirit of Yorkshire Distillery, said: “Although we haven’t been open for visitors during lockdown, the distillery has been operating as normal and we have been able to distil, nose and sample our whisky safely.

“Distilled in 2016, Filey Bay STR Finish is a field-to-bottle single malt that spent years maturing in Bourbon casks before transferring to shaved, toasted and re-charred (STR) red wine barriques, which came from Rioja vineyards in Spain, to be finished.”

The new whisky is described as completely different to the distillery’s previous releases.

Joe Clark, the distillery’s whisky director, said: “It takes the citrus and caramel flavours from the Bourbon casks and weaves them with the red fruits of the Rioja barriques. This creates a complex whisky with spice and depth that’s underpinned by our light and fruity house style.

“Our STR casks held Rioja wine for around five years and after disgorging at the bodega have then gone back to the cooperage in Jerez to undergo the reconditioning process.”

Limited to 6,000 bottles, Filey Bay STR Finish is priced at £60 (US$76) per 700ml bottle.
