Aaron Díaz leaves Lima’s Carnaval to open two bars

Peruvian bartender Aaron Díaz has left Carnaval in Lima after nine years to join Super Group: Hospitality & Experiences.

Aaron Diáz brings a culinary approach to cocktails

Díaz founded Carnaval in January 2018, with the venue featuring on the 50 Best Bars list in 2019, 2022 and 2023.

Prior to launching the bar, he worked in both kitchens and bars including The Aviary in Chicago and Astrid & Gastón in Lima. His dual gastronomic and mixology background helped to inform his culinary approach to cocktails.

He now joins Super Group, whose hospitality portfolio includes María Mezcal, El Infusionista, La Cachina and La Calor, all in Lima.

His association with the group and founder Jorge Chung began in 2025, with Díaz advising on María Mezcal’s cocktail menus in 2025.

Some of the Carnaval team will also be joining Super Group, however the bar will remain open.

Under Diaz’ guidance, Super Group is set to open two bars in Lima: Lima Sour and Superbar.

Lima Sour is dedicated to the Pisco Sour, exploring the cocktail in depth and ‘taking it to the very limits of its perfection’. The bar sits on the cliff where the Miraflores promenade overlooks the Pacific Ocean and is expected to open halfway through this year.

Meanwhile, Superbar is also slated to open this year, on Calle Bonilla in Miraflores. The bar is described as ‘an explorative platform that will offer diverse ways of sensory enjoyment’.

The venue offers different spades and a bar designed as a stage, where cocktails are served up as live performances. Also available will be a more intimate tasting and pairing experience, bringing haute cuisine and mixology together.

Superbar will also operate a lab for research and development, with spaces dedicated to the study of products and fundamental elements, such as ice.

Lima’s cocktail scene is going from strength to strength thanks to bars like Carnaval, Lady Bee and Sastrería Martinez.
