Brunel’s CV includes several years at the George Washington Bar at the Freehand Hotel, also in New York. He also helped to launch the Tusk Bar at The Evelyn Hotel.

The Ned said he has ‘spent the past decade refining his craft, building programmes that are as inventive as they are approachable’, and ‘his storytelling approach to cocktails emphasises balance, creativity, and genuine hospitality’.

At The Ned NoMan, Brunel will unite the property’s beverage programmes under one vision, and focus on fostering collaboration and mentorship.

The brand added that he has attended Tales of the Cocktail (TOTC) six years running and completed advanced brand and spirits education.

Chris Moore was formerly the hotel’s head of bars, however he departed in January 2025 and is now corporate beverage director at Jean-Georges Management.

The Ned’s outpost in London recently collaborated with The Macallan to create a Christmas tree inspired by the Scotch brand.
