Amaro Santoni opens distillery in Tuscany
By Georgie CollinsAperitivo brand Amaro Santoni has opened the doors of its new distillery in Chianciano Terme, Italy, to the public.

Casa Santoni is the new home of the 16% ABV aperitivo, which is imbued with 34 natural herbs and botanicals, and centres on the flavours of rhubarb and iris with undertones of citrus and olive leaves.
The distillery build began in March 2025, and officially opened to the public in July to offer guests an inside look at the brand’s liquid creation and distilling process.
Casa Santoni spans 5,000 square metres, with multiple production, ageing, and hospitality spaces designed in harmony with the Tuscan countryside.
The site features a botanical garden that surrounds the distillery, filled with aromatic plants and herbs.
The garden serves as inspiration for Santoni recipes that are served in the hospitality and tasting area, which was designed by architect Monica Rossi.

The tasting area is described as a warm, circular space, and at its centre stands a round bar counter, inspired by the Hotel Savoia of the 1950s, where founder Gabriello Santoni first discovered his passion for bartending.
The distillery itself is located in the garden, and houses a handcrafted Müller still, which was custom-designed with the guidance of master distiller Gianni Vittorio Capovilla.
Its patented innovations enhance aromatic extraction while preserving the natural integrity of botanicals.
Operated in a bain-marie system to prevent overheating, it features a botanical basket and a rectification column, allowing the creation of both finished spirits and single botanical distillates used in Santoni recipes.
Meanwhile, the production department is equipped with ‘state-of-the-art’ systems for filtration, reverse osmosis, automated blending, and Gai bottling machines. The process integrates advanced industry 4.0 technologies while using water drawn from proprietary wells in Chianciano Terme.
Built with the latest sustainable technologies and water-saving processes, Casa Santoni wants to emphasise that it is a family-run company guided by ethical values, inclusivity, and the wellbeing of its team.
The distillery is open for visitors from Monday to Friday, 9am until 12:30pm, and 3pm to 5pm.
