Remus Bourbon opens bar in Manhattan
By Lauren BowesCarver Road Hospitality and Ross & Squibb Distillery’s Remus Bourbon have opened The Blue Vault bar in New York City.

Carver Road is behind venues including Starchild Rooftop Bar, Rosevale Cocktail Room, and The Forty Eight, the latter of which will open in autumn.
The Blue Vault is an immersive experience inspired by the Roaring 20s and the legacy of George Remus. Remus was an infamous Prohibition-era bootlegger once dubbed the ‘King of the Bootleggers’.
Drinks will be based on Remus Bourbon’s expressions and the brand’s history.
Beverage director Alec Kass has curated the beverage programme, in collaboration with the bar team at Rosevale Cocktail Room in New York.
Options include the West Egg Cocktail, which features Bourbon, amaro, peach, cacao and coconut, as well as the Armed and Dangerous, which is a blend of Bourbon, brûléed banana, walnut, and egg white.
Non-Bourbon cocktails include the Silver Screen Sinner, made with Bowling & Burch New World Gin elderflower, lemon, and Prosecco, and the Sangreal Omerta, which combines Tequila, pineapple, red chilli and red wine.
The bar will also offer a ‘Minor Offences’ deal between 9pm and 11pm, where guests can order half-sized classic cocktails for US$10. Options include the Gold Rush, Sazerac, Boulevardier, and Manhattan.
Whisky flights are also available, including the Flight Risk, which includes Remus’ Straight Bourbon, Highest Rye Bourbon, and 9 Year Experimental, as well as Rossville Union Rye.
Food and design
The food menu, created by chef Daniel Ontiveros, comprises classic American dishes designed to pair with Remus Bourbon. Options include salmon tartare cones with avocado mousse, tobiko, rice pearls, and spicy soy; steak tartare with cornichons, dijon, frico, and truffle; and crispy artichokes with green goddess sauce.
Rockwell Group led on design, which pays homage to the bar’s home in the heart of New York’s Theater District.
The space features a floor-to-ceiling exhibit of theatre memorabilia, including red boots from Kinky Boots and Elphaba’s hat from Wicked. There are also ‘never-before-seen’ set models of Broadway shows and rare vintage photography of theatre productions.
Last week, New York welcomed a new agave bar called Mixteca.
