Sastrería Martínez unveils new cocktail menu
Speakeasy bar Sastrería Martínez is celebrating its third birthday with the launch of a new cocktail menu inspired by Peruvian textiles.

Located in Lima in Peru, Sastrería Martínez is hidden behind a tailor shop façade.
The new menu celebrates Peru’s diverse textiles and a trio of the country’s biodiverse regions.
Founder Diego Macedo and his team travelled to Cusco in Peru’s Altiplano region, Tarapoto in the Amazon region, and to Paracas in the south. The latter area is particularly notable, as it was the birthplace of Peruvian textures, where Paracas civilians made their home more than 1,000 years before the Inca civilisation.
The menu is divided into three geographical locations: Costa (Coast), Sierra (Mountains), and Selva (Jungle).
The new list includes an updated fourth iteration of the Mrs Martínez cocktail, inspired by Costa. The serve uses Peruvian gin Intira as its base, mixed with strawberry-infused Aperol, mandarin lime, blueberries and bitter lemon.
Additional highlights from the 2025/2026 menu include Misminay, which is a tribute to the eponymous tiny agricultural and textile-producing community from the Cusco region. Described as herbaceous and refreshing, yet spirit-forward with plenty of character, its ingredients include sanky (a cactus fruit similar to a prickly pear with the flesh of a kiwi), and Eliseo limoncello (made with citrus fruits cultivated in the Sacred Valley’s Quillabamba district).

Furthermore, Kené was inspired by the textiles created by the Shipibo-Conibo indigenous people who live alongside the Ucayali River in the Peruvian Amazon. This classic cocktail dates back to Prohibition, and Sastrería Martinez’s riff on the serve includes base of Peruvian rum Cartavio Solera 12 Years Old fat-washed with chestnut, as well as Amazon citrus distillate that’s prepped in house with lemon, mandarin and rugoso lemon, and white vermouth made with mamey sapote.
Sastrería Martinez also hosted a quartet of guest shifts in May this year to mark its anniversary.
The bar welcomed acclaimed bartenders from around the world: Paul Aguilar and Maros Dzurus from Himkok in Oslo, Norway; Márcio Silva from Eximia in São Paulo, Brazil; Franky Maldonado and Kevin Muñiz from Employees Only in New York, US; and Maycoll Tobon of Carmen in Medellin, Colombia.
Last year, The Spirits Business travelled to Peru to learn more about Sastrería Martínez and its 2024 menu.
Founder Macedo was also among the first guests on The Spirits Business Podcast.
