NYC welcomes bar with more than 400 whiskies
Foolproof in Williamsburg, Brooklyn, offers a wide range of world whiskies and ‘pairing-minded’ cocktails.

Industry veteran Andy Lock, of The Lobster Club and Gotham Bar & Grill, is behind the venture.
The bar’s whisky collection spans the traditional – American, Scotch, Irish and Japanese – as well as more ‘unexpected’ origins, including Austria, South Korea, Mexico, Denmark, and Sweden.
As well as drams, Foolproof will offer whisky flights and boilermakers (and whisky and beer pairing). Whisky flights feature three spirits based around a theme, such as bonded, NY and Eurotour.
The cocktail list includes both classics and house originals.

The classics section features a Trinidad Sour, made with Smith & Cross rum and house bitters, and a ‘smoky, citrus-forward’ Paloma with mezcal and Byrrh.
Meanwhile, the Foolproof Originals section includes Salad Days, which blends Icelandic spirit Brennivin, Suze, tomato water and rice vinegar. The Coffee & Brunch features brown butter-washed Bushmills Irish Whiskey, coffee liqueur and espresso.
The Foolproof Reserve list offers the Truffled Old Fashioned, made with black truffle-infused Prunier VSOP Grande Champagne Cognac and chocolate bitters.
“Foolproof is the kind of bar I’ve wanted to open for years,” said Lock. “We take the whisky seriously – but never ourselves. This is a place to drink well with an extensive list of options, eat well, and actually have fun doing it.”
The bar spans 900 square feet, with interiors featuring leather banquettes and warm lighting. It has a walk-in-only policy to ‘keep things casual and accessible’.
Food is served throughout service, comprising ‘elevated’ bar fare designed to be paired with spirits. Dishes include sashimi-grade tartare, house-cured meats, a beet-and-burrata salad, French onion dip, and whiskey ice cream sandwiches.
