Mexico City-inspired bar opens in Brooklyn
The husband-and-wife team behind Winona’s restaurant in Bed-Stuy have opened Dolores in the same neighbourhood.
Co-founder Emir Dupeyron’s childhood in Mexico City is the inspiration behind the bar.
Leanne Favre, of Clover Club and Leyenda, is a partner and beverage director. She heads up the drinks programme, which focuses on agave-forward beverages and ‘elevated cantina staples’.
Margaritas will feature a housemade sour mix and will be available on draft. Meanwhile, Palomas will blend grapefruit and sumac and be carbonated ‘a la minute’.
The Mexican Espresso Martini incorporates elements of a Carajillo, featuring Mexican coffee rum and amaro.
Elsewhere, the Midnight Cowboy is a riff on a Martini that is served with cotija cheese-stuffed olives. Meanwhile, the Jerk Batanga is made with a house-blend of jerk spices, banana, lime, and topped with Mexican Coke.
Dupeyron is behind the food menu, which comprises bar snacks – known in Mexico City as ‘botana’ – tacos and daily specials. Highlights include guacamole with hot totopos fried to order; chicharrones fritos (fried pork belly); and tlacoyo de haba, a traditional Mexican stuffed-corn tortilla topped with a nopal salad and fava bean purée.
The taco menu features the Cochinita Pibil Turix, which is inspired by the El Turix Taqueria in the Polanco neighbourhood of Mexico City. At the weekends, from 11pm to close, Dolores will offer tacos de canasta, AKA ‘basket tacos’, which are filled and bathed in oil before being stacked in a basket.
In terms of decor, Dolores draws inspiration from classic Mexico City cantinas, featuring custom hand-carved cantina-style tables.
David James designed the bar’s walnut-toned wood and green velvet banquettes, which are complemented by chrome accents, brown leather chairs, and tiled floors.
