Copenhagen ages whisky in aquavit casks

Denmark’s Copenhagen Distillery has partnered with department store Harvey Nichols to offer an aquavit cask-aged whisky.

Copenhagen Distillery x Harvey Nichols Rare Aquavit Cask Whisky is part of the Rare Collection, which is dedicated to experimentation.

The dark heather honey-coloured whisky presents notes of Scandinavian caraway, fennel, sweet citrus, honey, grain and oak with light hints of anise, dried papaya and green leaves. The notes are accompanied by vanilla, white pepper and cloves on the finish with oak tannins, cedar tree and leather.

The Rare Aquavit Cask Whisky demonstrates Copenhagen Distillery’s commitment to ‘continuously evolving’ and ‘reshaping the new world whisky landscape’.

The partnership between the self-described ‘rebellious’ distillery and the luxury department store is a ‘milestone moment’ for Copenhagen Distillery.

It marks its first collaboration in the UK and a step away from traditional whisky norms.

Örn Ólason, co-founder and brand director at Copenhagen Distillery, commented: “This has been an incredibly exciting opportunity for us. We were delighted to create an exclusive rare whisky for Harvey Nichols, which we matured in our aquavit casks to create a distinctive, specialised taste.

“This product is a testament to our innovative, scientifically driven production methods, and it’s wonderful to be able to bring our passion to Harvey Nichols’ premium customers.”

Available exclusively at Harvey Nichols and offered at 49% ABV, the whisky retails for £275 (US$357) for a bottle or can be bought by the glass at the Fifth Floor Bar in the Knightsbridge flagship store in London.

These aren’t your classic whiskies or your classic whisky distillers, which makes this collaboration so exciting and unique.”

Copenhagen Distillery was established in 2014 and is the only distillery in Denmark’s capital. It produces small batches using 100% organic Danish ingredients and contemporary methods.
