Beaufort Bar reopens with new late-night concept
By Georgie CollinsThe Savoy hotel will reopen the Beaufort Bar this September with a new drinks list and ‘opulent’ night-time concept that celebrates ‘the thrilling things that happen after dark’.

Led by hospitality consultant Anna Sebastian, the Beaufort Bar team has created the new cocktail menu called Nocturne, which takes its inspiration from The Savoy’s previous incarnation as a royal palace and its historical links to the Montmorencey-Beaufort Champagne region.
The new menu features 10 drinks designed to reflect the scents and flavours found in Champagne.
Sebastian commented: “The cocktail menu takes inspiration from the flavour bouquets often found in the Champagne region, in its wines and Champagnes, and the resulting drinks are fun, playful and executed with a touch of flair.”
Drawing on the decadent reputation of the French sparkling wine, the signature serve on the menu is the Golden Apple Champagne Cocktail which combines whiskey, Cognac, Calvados, toffee apple and Laurent-Perrier, and features a 24-karat-gold sugar cube as a garnish.
Reflecting the fruity notes of Champagne is Good Fortune, a floral and fizzy mix of mandarin gin, pink grapefruit, elderflower, violet, jasmine and white peach, while the terroir’s earthy tones are present in Aura, a blend of whisky, aquavit, vermouth, maple, walnut and mushroom.
The reopening marks a new direction for the Beaufort Bar, with a focus on ‘late-night celebrations, flirtations and indulgences’ that take place in the bar’s iconic black and gold interior.
“The new Beaufort Bar is set to fill a gap in the London late drinks scene,” Sebastian added.
The bar will host a new nightly programme of DJs that will create a sophisticated party atmosphere.
Open until 1am on Mondays, Thurdsays and Saturdays, the bar hopes to become one of London’s most exclusive night-time destinations.

In May, Sebastian helped to launch the latest menu from The Savoy’s American Bar.
The bar has since appointed Chelsie Bailey to the role of head bartender.
