Rémy Martin to host pairing challenge
By Georgie CollinsCognac brand Rémy Martin will host the final of its Sustainable Pairing challenge on 11 July at London’s Carousel restaurant.

Rémy Martin has challenged the members of the hospitality industry to create a unique sustainable pairing dish that celebrates responsible cooking practices while enhancing the complexity of the brand’s Fine Champagne Cognacs.
Participants have been asked to form pairs composed of a chef and front of house member, such as a bartender or bar manager. The pairs must currently work together at a UK restaurant, and the venue must list Rémy Martin XO or Rémy Martin Tercet Cognac.
Together they have been tasked to create a food pairing dish for either Rémy Martin expression. The dish can be sweet or savoury and range in size from a canapé to a larger dish, but it must encourage sustainable practices.
The judging panel will be made up of Rémy Martin UK brand ambassador Jack Charlton, Carousel owner Ed Templeton, acclaimed chef Tommy Banks, and presenter, author and drinks writer Alice Lascelles.
The judges will mark the participants on the taste of their dish; its pairing ability with the Cognac, the story behind the creation; how sustainable the dish is, including sourcing and traceability of the produce; the dish’s seasonal adaptability throughout the year; and the pair’s knowledge on the history of the Cognac brand’s and its sustainable practices.
The final will see nine pairs competing, with five being shortlisted as the best in show, winning them a trip to the Rémy Martin Maison in Cognac.
Only one pair will take home the title of Rémy Martin’s Sustainable Pairing champion, winning visibility for their sustainable initiatives and the opportunity to curate a four-hands dinner together with ‘industry titan’ Tommy Banks.
