Hyde & Co creates cocktails inspired by Bristol’s bars

Bristol bar Hyde & Co has launched a new cocktail menu featuring drinks inspired by the city’s “infamous drinking dens”.

The Dugout is made with Tapatio Blanco, Strega, hops, peach and tonic water

Hyde & Co’s new Dens menu, which launched earlier this month, was developed to create a “cocktail tour” of the city and features drinks influenced by Bristol’s “pubs, clubs, coffee houses, chocolate houses and live music venues”.

Organised by flavour, from “light and delicate” to “punchy and robust”, the new menu features 21 cocktails and five no- and low-alcohol serves.

The drinks are inspired by venues including the Western Star Domino Club, jazz club The Granary and Highbury Vaults, which was home to public executions in the city.

Cocktails include the Cheese Lane Distillery, which was created in honour of the city’s former whisky distillery and is made with Circumstantial Mixed Grain Spirit, Port Charlotte 10, honey, kalamata olive and rosemary; and the Corn Exchange, inspired by the Bristol music venue of the same name and made with Buffalo Trace, butter, corn, maple and pecan.

Drinkers can also sample The Dugout, inspired by its namesake music venue, which was once the home of electronic musicians Massive Attack. The cocktail is made with Tapatio Blanco, Strega, hops, peach and tonic water.

Alongside each drink on the menu is a short description of the location that served as inspiration, as well as an illustration that encapsulates each venue.

Hyde & Co also offers a menu of alcohol-free cocktails, including one made with Hyde rhubarb cordial, oat, Peychaud Bitters and soda, and another that combines pineapple juice, ginger kombucha, lime and passionfruit.
