Spirit of Yorkshire releases final maturing malt

English distillery Spirit of Yorkshire has launched its fourth and final ‘maturing malt’ ahead of the release of its English single malt whisky next year.

Distillery Projects 004 is a limited edition expression that follows the launch of Spirit of Yorkshire’s firstsecond and third ‘maturing malts’.

It is described as being “elegant, fruity and aromatic with notes of salted caramel, crème brûlée, toffee apple, honey roasted nuts, orange sherbet and five spice”.

Distillery Projects 004 is the final bottling in a series of four collectible spirits from Spirit of Yorkshire, a distillery based in Hunmanby, Yorkshire, that focuses on provenance and traceability.

Spirit of Yorkshire whisky director Joe Clark said: “The Maturing Malts series evolved from positive feedback to samples of the maturing spirit that visitors enjoyed when touring the distillery.

“A year on from our first bottling, we have watched our spirit continue to develop and soften as oak and time deepens the aroma and flavour.

“Cask selection for DP004 has been a real voyage of discovery taking us through our 2016 cask fillings, many of which continue to advance at an astonishing rate.

“The release is built around the distillery’s two spirit styles comprising of a 50/50 split between the traditional pot and progressive column distillates.

“Like the previous expressions, only a handful of casks have been selected and married together to create the release, including first-fill Bourbon, STR (re-conditioned wine casks) and Sherry, but unlike the others, 004 is slightly older, tipping towards the two-year mark.”

Bottled at 46% abv, Distillery Projects 004 is limited to 2000 bottles. It is priced at £39.95 (US$51) and can be ordered through the distillery’s website or from the distillery shop.
