Spirit of Yorkshire releases second ‘maturing malt’

Spirit of Yorkshire Distillery has released its second limited-edition ‘maturing malt’ ahead of the debut of its single malt English whisky next year.

Distillery Projects 002 has a “lighter, cleaner flavour profile” than its predecessor

The bottling – titled Distillery Projects 002 – offers a “glimpse into the maturing casks” at the new distillery, and follows the launch of its first maturing malt in November last year.

Distillery Projects 002 is the second in a series of four collectible spirits from Spirit of Yorkshire, a distillery based in Hunmanby, Yorkshire, that focuses on provenance and traceability.

The expression is different to the first maturing malt due to its increased proportions of spirit that was partially distilled using a four-plate rectifying column.

The column works in tandem with the distillery’s more traditional spirit still, increasing the spirit’s copper contact and creating a “lighter, cleaner flavour profile”.

Distillery Projects 002 is a marriage of three cask types: Bourbon, oloroso Sherry and re-conditioned red wine casks.

“With DP002 we wanted to showcase the lighter of our two spirit styles and create a more fruit and distillate driven expression,” said Joe Clark, whisky director.

“In contrast to our first release, where the focus was on our richer, heavier spirit style and more wood driven flavours, this new release really sings in your glass, and, like the first, is sensational easy drinking.”

Just 2,000 bottles of Distillery Projects 002 have been released at an RRP of £39.95.

Spirit of Yorkshire began production of Yorkshire’s first single malt whisky at the start of last year. The ‘grain to glass’ site is an extension of Wold Top Brewery and exclusively uses barley sourced from nearby Yorkshire fields.

“We didn’t set out to just replicate Scotch, but to create a whisky that is filled with our own unique spirit and that of our local area,” said co-founder Tom Mellor.

“We’re committed to making every drop of our whisky from first principles. We only use locally and sustainably produced ingredients – all the barley and spring water we use is grown and sourced from our family farm just a few miles away from the distillery.”
