According to committee documents the Grayson College Distillery will cost US$1 million, with the 3,850sqft building comprising an open distillery and barrel rooms.

The distillery will be situated next to the College’s vineyard to and will enable the school to teach distillation science in addition to its wine programme.

The school is due to break ground on the distillery build shortly.

“It’ll be an exciting opportunity for Texans and for students from all over the United States to come here to Denison, Texas to learn about distillation science,” Professor Andrew Snyder, director of Grayson College Viticulture and Enology, told KTen.

“We’ll be taking a still, and taking some grain, corn, wheat, barley, and then turning that into whiskey, using wines to make brandy.”

According to Snyder, Grayson College will be one of just a few across the US to offer advanced distillation courses.

He also added that the school is hoping to sell its wines and spirits to the public.

Grayson College is a founding member of the Texoma Craft Beverage Alliance alongside the Sherman Economic Development Corporation and Denison Development Alliance, which is working to boost the wine, brewing and distillation industries in the Texoma region.

The Grayson College build is the latest in a series of Texas spirits developments, with Balcones opening its new distillery in Waco last year.
