Never Never launches Landers Lime Gin
By Rupert HohwielerAustralian producer Never Never’s Landers Lime Gin is the first from the brand’s new distillery at Brisbane International Airport.

Landers Lime Gin is also the first gin from the Never Never team since 2024. The team pivoted to vodka last year.
The expression is built around lime, with finger lime, Tahitian lime, desert lime and Makrut lime leaf all featured in the condenser basket. The gin is also distilled with coconut cream for a ‘rounded, luxurious texture’, and fresh Queensland ginger for ‘bright, warming spice’.
The rest of the recipe contains Never Never’s signature botanical backbone of juniper, coriander seed, angelica root, liquorice root and lemon peel.
Co-founder Sean Baxter said: “We leaned into building a gin that pairs perfectly with a great lemon, lime and bitters or a zesty G&T. Lime is already a hero flavour across the venue, so we used that insight to shape the spirit from the ground up.
“The use of lime adds a fragrant citrus heart to the gin that really jumps out of the glass and adds bags of complexity to any classic cocktail you throw at it.”
Landers Lime Gin is recommended in serves such as sparkling Highballs and Frozen Lime Daiquiris. It sits at 40% ABV and retails for AU$80 (US$58).
Landers Pocket kicks off production
The gin is expected to be the first of many spirits to be produced at Landers Pocket, which opened at the end of last year as a destination for travellers arriving in Brisbane from across Australia and beyond.
The site features a microdistillery, brewery, 800-capacity venue, beer garden, gastropub dining and several event spaces.

“Since being welcomed to produce at Landers Pocket, we’ve been focused on creating a gin that feels right at home here,” Baxter said. “It gave us a chance to explore local ingredients and design a flavour profile that truly connects with the venue and its community.”
Landers Pocket is offering promos such as a Never Never ‘Shelly’ on Sundays that sees its Oyster Shell Gin poured ice cold from an oyster shell via a roaming gin trolley.
“I’ve always loved a cheeky cocktail on course,” Baxter continued. “Landers Pocket is shaping up as a playground for anyone who enjoys world class and award-winning active hospitality.”
Head of hospitality at Landers Pocket, Chris Cogriff, who was onsite for the first day that the spirit ran through the still, added: “From day one, we’ve wanted everything at Landers Pocket to feel connected to Queensland; the people, the produce, the lifestyle.
“Seeing Never Never bring that to life in a gin distilled right here is exactly the kind of story we want to tell. Landers Lime isn’t just a great spirit, it’s a celebration of what this community is capable of, and what active hospitality can really look like.”
Never Never was founded by Baxter, Tim Boast and George Georgiadis in 2016. Its original distillery is located in McLaren Vale, South Australia.
“South Australia has given me so much, both professionally and personally, but Brisbane will always be home,” added Baxter, a Queensland native.
In May 2024, the brand was acquired by the Australasian arm of Asahi Group for an undisclosed sum.
