Advocatuur appoints bar director
Maroš Dzurus has become the new director of bars and beverage at Advocatuur at Rosewood Amsterdam as Yann Bouvignies moves up the ladder.
Advocatuur opened in May 2025, with Bouvignies moving from Scarfes Bar at the Rosewood London to help launch the site.
Bouvignies is now corporate director of food and beverage, excellence – EMEA for the hotel group.
Dzurus has nearly 20 years of experience in the drinks and hospitality industry and joins the Dutch bar from Himkok Oslo, where he was bar manager.
He previously collaborated with the Advocatuur team during the bar’s first guest shift.
In his new role, Dzurus will lead the bar’s creative direction and guide the development of future mixology programmes.
His focus will include innovating with local and seasonal ingredients, strengthening bar team development, and enhancing the guest experience through an elevated approach to service, storytelling and technique.
He said: “I am very much looking forward to making the move to Amsterdam to lead the team at Advocatuur.
“Over the past year, the team has cultivated a bespoke and inspiring drinks experience committed to heritage, culture and outstanding hospitality. I hope to build on this foundation by working closely with the team, building relationships within the local community, and supporting the continued development of the bar experience.
“I am excited to help define the next chapter of Advocatuur’s presence within the global bar scene.”
