Coya Dubai kicks off global roll out of Spirits of Peru menu
By Georgie CollinsLatin American restaurant and bar group Coya has unveiled a new chapter in its global bar programme with the launch of a Peruvian landscape-inspired cocktail menu.

Described as an immersive exploration of Peru’s diverse landscapes, traditions, and flavours, Coya’s inaugural global bar menu, called The Spirits of Peru: Madre Tierra, will be first introduced at the Pisco Bar in Coya Dubai on 29 January, followed by Coya Abu Dhabi from 6 February.
It will then be rolled out across Coya destinations worldwide, including Mayfair, Monte Carlo and Marbella.
Said to be rooted in Latin America’s vibrant spirit and Coya’s deep connection to Peru, the menu blends storytelling with contemporary mixology.
It has been crafted by Coya’s UAE-based bar team, led by Grégoire Schnerb, head of mixology, and Sany Bacsi, global bar manager.
Shaped by extensive research, multiple journeys through Peru, and a deep exploration of native ingredients and techniques, the The Spirits of Peru is described as a poetic yet contemporary interpretation of the country, designed to be discovered, shared, and experienced.
The serves have also been inspired by the travels of Camila de Quilla, a modern explorer retracing her heritage through Peru’s defining geographies.
The landscapes experienced on her travels, all revealed in her journals, are represented via ‘evocative’ flavour profiles, textures, and aromas, in a bid to transform her memories into ‘cocktails that speak to the senses’.
Bacsi explained: “Each cocktail on The Spirits of Peru: Madre Tierra is a chapter of a journey through Peru. From the brightness of the coast to the stillness of the Andes and the vibrancy of the Amazon, we wanted to translate not just flavours, but emotions, memories, and a sense of place. This menu is an invitation to explore Peru through the senses, while staying true to the soul of the Pisco Bar and Coya’s heritage.”

The list features 12 alcoholic cocktails – nine of which are global signatures while three are UAE exclusives – alongside four non-alcoholic cocktails crafted with the same creativity, balance, and attention to detail as the signature serves.
The menu begins with an exploration of Peru’s Pacific coastline, where bright citrus and savoury depth have been used to represent the rhythm of the sea. Cocktails such as La Mar, Agua de Chifa, Donna Luisa, and Chuno express sour and umami-led flavours inspired by coastal traditions.
The list then moves into the Andean highlands of La Sierra, which unfold with bold, spicy, and spirited creations, including Arcoíris, La Rueda, Divino, and Earl of Agave, each capturing the warmth, altitude, and strength of the mountains.
The journey culminates in La Selva – the Amazon rainforest – where lush greenery, rainfall, and vitality come to life through herbal, fruity, and refreshing cocktails, such as the Tesoro del Campo, Coco y Choclo, Hay-Agua-Ska, and Hualo.
At the heart of the experience are Coya’s homemade Pisco infusions – all time-honoured expressions that celebrate Peru’s heritage and continue to shape the brand’s global identity.
This inaugural Spirits of Peru menu marks the first chapter of an evolving annual series, with future editions set to reinterpret Peru through new narratives, ingredients, and creative perspectives, while remaining rooted in the spirit and legacy of the venue’s Pisco Bar.
