Dobel honours tradition with Tahona Blanco
By Miona MadsenProximo Spirits-owned Maestro Dobel Tequila has launched a new blanco expression in the US, crafted using a traditional tahona stone wheel.

The new blanco Tequila, made from organic Blue Weber agave, utilises the traditional tahona process, honoured by the Dobel family for generations.
The tradition sees the large volcanic stone wheel, known as a tahona, used to slowly crush the masonry oven-cooked agave hearts, extracting the liquid, which then undergoes a distinctive fermentation process.
The production method is said to preserve the natural sweetness and complex character of organic agave, as the juices and agave fibres are slowly fermented together for six to seven days in wood-lined, open-air vats, using wild ambient yeast. After fermentation, the liquid is double-distilled in small copper pot stills.
Bottled at 40.5% ABV, Dobel Tahona Tequila Blanco features fresh notes of cooked agave, white pepper, lemongrass, and eucalyptus. It is best enjoyed neat or in a classic cocktail.
According to Nielsen data from September 2025, tahona-style unaged Tequilas are outpacing the total blanco category growth, reviving one of the oldest traditional methods of production.
Dobel noted that US shoppers are increasingly interested in understanding the origins, producers, and crafting processes of Tequila. Dobel Tahona Tequila Blanco addresses this curiosity by reviving artisanal production methods from past generations.

“By embracing the traditional tahona method – slowly steam roasting the mature organic agave in masonry ovens, then manually unloading it and slowly crushing it with the tahona stone wheel – we are honouring the traditions set forth by past tequileros. One of the key elements in this process, beyond the tahona itself, is the use of natural fermentation with bagasse, which plays a crucial role in developing the Tequila’s complexity and character.

Dobel Tahona Tequila Blanco is now available in select US markets for a suggested retail price of US$47.99.
The expression can also be found at select bars and restaurants in New York, Texas, California, and Florida.
All profits from Dobel Tahona Tequila Blanco will be used to support community and educational programmes in the local Jalisco area, giving back to the town of Tequila, Mexico.
Earlier this year, the Tequila brand unveiled the latest release in its Atelier series: Animales Endémicos.
