Martell reopens rooftop bar with Remy Savage

Cognac house Martell has opened its rooftop bar for the summer with Rémy Savage, who has designed the cocktails.

Savage, who operates well-regarded cocktail destinations such as A Bar with Shapes for a Name in London and Bar Nouveau in Paris, is Martell’s global master mixologist, a role he’s had with the Cognac house since 2021.

At the brand’s rooftop bar in Cognac, named L’Indigo Bar and which offers panoramic views over the French town, Savage is redefining summer cocktails with Martell, such as the Margarita, Negroni, Mojito and Fine à l’eau.

On what he hopes to achieve with the residence, he said: “Since the beginning of my collaboration with Martell, my love and curiosity for this city, its vineyards, and its craftsmanship have only grown. As summer approaches, I felt the desire to settle here for the season, to share our world with the people of Cognac, under the indigo sun.

“This season will be a unique opportunity to continue exploring and discovering this terroir. A delicious ‘trick’ I learnt with time when making a drink for myself (or people I love) is simply to turn to Cognac as a base for their favourite classic.

“The rich and aromatic nature of Martell is comfortable blending in most cocktail structures and often adds a layer of complexity that surprises many!”

Described as refreshing, balanced and tart, the Fine à l’Eau serves features a mix of Martell VS and verjus, with sparkling water as an ‘effervescent surprise’.

The Margarita contains Martell Blue Swift, orange liqueur and lime, while the Mojito also uses Blue Swift as a base, combining lime, sparkling water and mint.

Lastly, the Martell Negroni features Martell VSOP with sweet vermouth and a choice of gentian-based bitters.

Martell is hoping to showcase its Cognac’s suitability for modern mixology through the partnership with Savage and the opening of L’Indigo Bar, rather than just a traditional neat spirit.

The bar is open until 4 October 2025 and is located on the rooftop of Martell’s headquarters: 16 Avenue Paul Firino-Martell, 16100 Cognac.

Martell also has a big-name culinary partnership with chef Alexandre Mazzia, of which The Spirits Business experienced at its historic Château de Chanteloup earlier this year.

The house’s cellar master, Christophe Valtaud, has said that experimentation is ‘crucial’ to Cognac’s survival.

Last year, the Pernod Ricard-owned brand auctioned its only bottle of a 72-year-old Cognac with Christie’s.

Exports of Cognac have plunged in the past year in the wake of its largest market by value, China, and its anti-dumping investigation on EU brandy – which set to end on 5 July following a three-month extension.
