DropWorks Rum rekindles Mallow listing
By Miona MadsenBritish rum distillery DropWorks has partnered with London restaurant Mallow to create a Coconut Daiquiri for the summer.

Industry veteran and master distiller Lewis Hayes founded DropWorks Distillery in Nottinghamshire in 2023. It claims to be the biggest rum distillery in Europe.
In its first summer, the distillery’s Clear Drop rum debuted on the menus of five Mildreds and two Mallow restaurants in London, marking its first on-trade listings.
Two years later, DropWorks has returned to Mallow’s summertime menu as the base for its Coconut Daiquiri.
A twist on the classic, the ‘refreshing’ serve blends DropWorks Clear Drop rum with falernum, coconut, pandan, and citrus.
Hayes said: “We’re incredibly pleased to see Clear Drop included in Mallow’s summer lineup. With [Mallow’s] outstanding reputation and consideration for every ingredient it selects, it means a lot to be part of something so carefully crafted.
“The pairing of our Clear Drop with coconut delivers an exceptional experience, with its rich, nutty-sweet flavour mixing with the subtly fruity notes of our Drop, resulting in a smooth tropical harmony perfect for summer. This really is the dream cocktail for bartenders to create on a hot day.”
DropWorks has expanded beyond London with listings across the UK, including at Stray in Manchester and Sister Ray in Liverpool. The distillery plans to appear in hundreds more venues throughout the British Isles.
Earlier this year, the distillery welcomed former Diageo executive Graham Appleyard as its CEO.
Last month, Dropworks announced its goal to triple growth in 2025 and become the preferred rum choice in the UK.
