5Nines Distillery unveils single cask whiskies

Australia’s 5Nines Distillery has bottled its first single cask whiskies, which have been matured in three different French oak casks.

Founded in 2016, 5Nines Distillery has bottled three limited edition single cask whiskies. The range includes Select Single Cask – 5ND090 Sherry Cask, Select Single Cask – 5ND060 Pinot Cask, and Cask Strength – 5ND0107 Liqueur Frontignac.

The 5ND090 Sherry Cask whisky was matured in a French oak cask seasoned with Spanish PX Sherry. Bottled at 46.7% ABV, 5Nines has filled 146 bottles with the whisky, which is described as having flavours of ‘pears, butter on toast, creamy vanilla and soft caramel’.

Matured in barrels seasoned with Murdoch Hill Wines Pinot Noir, Select Single Cask – 5ND060 is said to offer flavours of ‘toffee, mild ginger, nutty biscuit, gentle liquorice, sweet oak, vanilla and light smoke’. The distillery has filled 143 bottles at 49.4% ABV.

Finally, 5Nines Cask Strength – 5ND0107 is the producer’s first cask strength bottling and was aged in French oak barrels seasoned with Clare Valley Liqueur Frontignac.

Maturation in the liqueur-seasoned cask was said to impart flavours of caramel, boiled lollies and bluegum honey. On the finish, the whisky has notes of honey, apples and oak.

Bottled at a cask strength of 57.8% ABV, 5Nines Distillery has filled just 120 bottles.

David Pearse, co-founder of 5Nines Distillery, said: “It has been a highlight this year to finally bust open some of these casks that we have been patiently waiting to mature. It’s exciting that they are finally ready and even more exciting that the bottles are flying off the shelves.”

Available exclusively from the 5Nines Distillery online shop, the Sherry Cask and Pinot Cask expressions are priced at AU$220 (US$169) per 700ml. Cask Strength – 5ND0107 Liqueur Frontignac is priced at AU$270 (US$208) per 700ml bottle.
