Quaglino’s marks 90th anniversary with new menu

London bar Quaglino’s is celebrating its 90th anniversary with the launch of a new menu featuring cocktails inspired by the wishes, whims and aspirations of its guests.

Launching during the bar’s anniversary celebrations this evening (2 October), the Quaglino’s Wishes menu was devised by the venue’s team, led by bar manager Marco Sangion and head mixologist Federico Pasian.

Cocktails are divided between three sections, Wish, Season and Wine my Way.

The cocktail menu is separated into three sections: Wish, Season and Wine my Way.

Wish is available all year round and is inspired by dreams and fantasies. The section includes [I wish for] No Borders, which is made with ingredients from different corners of the world, such as Scotch whisky, Brazilian banana liquor, Sherry, Italian Montenegro liqueur and American peanut butter.

Season focuses on seasonality, with its first instalment featuring Fallen Leaves – made with Casamigos Reposado Tequila, black truffle, chrysanthemum and mangosteen kombucha.

To create the final section of the menu, Quaglino’s has spent the past year experimenting with various wine fermentations.

For the Wine my Way section, Pasian and his team have created ferments such as banana-saffron wine and barrel-aged pineapple mead, as well as other concoctions that will each be available for a limited time only.

Sangion said: “Last year we aimed to promote sustainability awareness among those who follow us – this year we are keeping the energy and enthusiasm around sustainability evolving through a creative and magical new cocktail menu.”
