Oz distillery unveils biodynamic wheat vodka
By Annie HayesAustralia’s Hippocampus Metropolitan Distillery has introduced its first small batch spirit – an organic vodka which is made using “biodynamic” farmed wheat.

Produced in the company’s West Perth distillery, Hippocampus Vodka is made with wheat sourced 300km west of the site, using a method of organic farming with no artificial chemicals sprayed on the soil or plants.
The wheat is fermented in small tanks before it is distilled in a custom-made copper pot still named after Australian pop singer Kylie Minogue, because it is “small, sings in tune and is very pretty”.
Alex Poulsen, distiller at Hippocampus Metropolitan Distillery, said: “Flavours of vanilla and fruit shine through with a super smooth mouth feel from distilling a select number of times, enough to ensure we embrace the soft sweet flavour of the wheat but not too much to strip away this wonderful texture.”
The new release is described as a “soft, smooth, flavoursome spirit”, and is intended to be enjoyed neat, with a mixer or as a base in a cocktail.
Bottled at 40% abv, Hippocampus Vodka will be distributed nationally by Memorable Drinks at the RRP of AU$79.99 for a 700ml bottle.
