Chase Distillery creates gin for The Ivy

Chase Distillery has created The Ivy Gin for Caprice HoldingsThe Ivy Gin, which is distilled from organic Herefordshire apples, has been created specifically for The Ivy Market Grill, due to open in Covent Garden on 24 November.
The distillery has used juniper alongside fresh coriander, cloves, cumin, almond and grapefruit and lemon peel as the gin’s botanicals.
The collaboration coincides with a similar partnership with chef Skye Gyngell’s Spring restaurant at Somerset House. Chase has teamed up with the restaurant’s head bartender Jonas Stern to develop arrange of exclusive liqueurs.
Stern used high proof spirits from the distillery and macerated it with seasonal herbs and fruits for the selection.
The distillery claims its focus on “field-to-bottle” production has led to Chase being “recognised and admired by top chefs”.
Creating bespoke spirits for independent operators has become a popular sideline for many distilleries, giving rise to a new wave of house-made spirits.
Earlier this month Bristol restaurant The Ethicurean revealed it is now selling its own British vermouth made using herbs from its walled garden.
