New York Distilling Co opens Jaywalker bar

Launching today (11 June), Jaywalker is a new cocktail bar and event space inside the Bushwick distillery of New York Distilling Company (NYDC).

NYDC said the bar is an ‘ode to the city’s artists and rebels’, with its name echoing the brand’s Jaywalk Rye. The whiskey uses a 17th-century variety of New York rye that is just one-third the size of conventional rye, resulting in a less ‘spicy’ expression.

Jaywalker’s cocktails will make use of NYDC spirits, including ‘approachable’ riffs on the Manhattan and Martini that are priced at US$12.

“Steinbeck said: ‘New York is where you prove if what you think in theory makes sense in real life.’ For me, the simultaneous simplicity and complexity of a great Manhattan is the epitome of a great night out,” said NYDC founder Allen Katz. “By the second drink in hand, there is usually a realised plan in play built on curiosity and confidence. That’s the feeling we want Jaywalker to capture.”

Jamie Gordon is behind the cocktail programme, which is inspired by the aromas and flavours of ‘New York City constants’, such as local flower shops, bodegas and markets.

Highlights include an Egg Cream made with Jaywalk Bonded Rye, Ferrand Cognac, homemade chocolate syrup, milk and seltzer, garnished with freshly grated nutmeg.

The Floral Arrangement Martini, meanwhile, combines Dorothy Parker New York Gin, sakura vermouth, jasmine-infused extra dry vermouth, and chamomile bitters.

For summer, frozen drinks include the Vesper Frosé and the Vacation Mode Manhattan.

As well as serving cocktails, Jaywalker will offer guided tastings and immersive blending experiences.

Food is provided by Kings Co Imperial, with options including chicken wontons with cinnamon red oil and cold sesame noodles topped with spring onions and peanuts.

Creative agency Contagious is behind the interiors, which are designed to feel ‘distinctly Brooklyn’ through industrial textures and oversized murals. The 3,000 square foot space also features a state-of-the-art sound system, adaptable layouts, leather banquettes, and velvet upholstery.

Loch Lomond Group bought NYDC in May 2025.
