Four Pillars launches Three Peach Gin
By Miona MadsenAustralian distillery Four Pillars has launched a limited edition Three Peach Gin, which is designed to stand out in cocktails.

Three Peach Gin was inspired by brunch drinks such as the Bellini, and created as the Four Pillars team’s ‘gin of daytime dreams’.
To make the gin, several botanicals are added to the pot still, including juniper, bourbon vanilla pods, roasted almonds, roasted wattle seed, strawberry gum, and the first of three types of peaches – native quandong.
Additionally, other botanicals such as apples, finger limes, and fresh peaches are placed in a botanical basket inside the still.
While the stills are typically where Four Pillars’ gin-making process begins and ends, this particular gin continues to evolve after distillation.
To enhance the peachy Bellini flavour and add a hint of colour, a macerate of yellow and white peaches is added.
Sarah Prowse, Four Pillars head of distilling, said: “The final liquid is a delicate, layered gin that balances fresh peach, zesty green apples and finger lime citrus with the warming spices from the dry botanicals and the aromas from the strawberry gum.
“There are aromas of white stone fruit and white chocolate with hints of citrus and green apple, and on the palate, there is a soft, rounded sweetness with a crisp finish.
“We made it to a lower ABV of 37.8% (the same as our Bloody Shiraz Gin), which suits some of the more delicate botanicals and also happens to be pretty perfect for a brunch tipple.”
Three Peach Gin works well in cocktails such as a Peach Gin Spritz with mint, a Charlie Chaplin, Peach Bellini, and a Highball with soda water.
The limited edition gin is available to Four Pillars’ email database from 23 April for AU$82 (US$59).
The expression will be available to the public starting 28 April, accessible via the distillery’s website, the Gin Shop at the Four Pillars Healesville Distillery, global travel retail, and independent retailers.
Last month, the distillery launched El Cuatro Gin, inspired by Mexican flavours and designed for use in Margaritas and other cocktails typically made with agave spirits.
