Soho Hotel menu tours England’s regional producers
The Refuel Bar at The Soho Hotel in central London has unveiled its Nine Regions cocktail menu, which celebrates English producers and independent regional suppliers.

The Nine Regions menu, which debuted on 1 March, champions ‘the diversity of English flavour’, with each serve crafted exclusively from ingredients sourced from small, independent producers from each of the nine designated regions.
Kevin Fry, food and beverage manager at The Soho Hotel, said: “Our Nine Regions menu was created to showcase what can be found across England. We work with many small producers, some still making their products at home, and London gives us a platform to share and celebrate their stories. It’s been incredible to speak to so many dedicated producers and distillers, and I can’t wait to share them with Soho.”
The North East cocktail features traditional method sparkling mead from Northumberland Honey Co, alongside Rosebud Preserves pear, orange and ginger chutney, lemon, and egg white.

Slingsby’s rhubarb gin stars in the Yorkshire & Humber serve, alongside Mr Fitzpatrick’s rhubarb and rosehip cordial, lemon, and Fentimans Dandelion and Burdock soda. Meanwhile, the North West celebrates Broken Clock Vodka paired with a smooth blend of Lancashire English breakfast tea and a delicate hint of rose, served with a shortbread finger garnish for ‘the ultimate tea and biscuits’ serve.
Representing the central belt of the country, the West Midlands serve is crafted with Hogan’s apple brandy, Hogan’s cider vinegar, Pixley Berries blackcurrant cordial, and Hawkstone cider. East Midlands nods to the famous Bakewell tart and spotlights Derbyshire’s Shining Cliff spiced gin, sour apple, Belvoir ginger, and Hogg Norton cherry liqueur.
Using East Anglian distillery The English’s Smokey whisky and Norfolk PX liqueur, the East of England cocktail is a spiced take on a classic creamy flip, and also features egg, treacle and nutmeg. Meanwhile, the South East region is represented by a cocktail made with Foundry Corn whiskey from Canterbury Brewers & Distillers, walnut liqueur from fellow Kent distillery Pleasant Land, and red vermouth from south-east London’s Asterley Bros.
Cornish Twin Fin pineapple and pink grapefruit rum is at the centre of the South West, which is combined with Country Cordial mulled apple and lime, while the final region, London, brings together Sapling vodka, pepper-spiced Ice-Cold Bear lager cordial, and London Essence Soda.
