Jigger & Pony reveals Pop City menu

Pop City x Pony opens in Singapore’s Cecil Street today (5 December) as part of the acclaimed Jigger & Pony Group.

The launch, in collaboration with the House of Suntory, was announced in October, with the bar taking over the space left by Jigger & Pony’s Sugarhall.

It has since been revealed that Pop City x Pony is sharing the address with Barrel, an izakaya-style restaurant based around Suntory’s Hibiki whisky.

The bar’s name references City Pop, a Japanese music genre from the 80s that fused ‘Western influences with Japanese sensibility’.

Its menu is divided into two sections: Pop, which is ‘spirited, expressive, and full of life’; and City, which is ‘urban, stylish, and effortlessly elegant’.

Japanese ingredients, such as yuzu, hojicha, and dashi, feature throughout.

“Each drink is like a track or an outfit that tells a story,” said bar programme director Aki Eguchi. “The drinks in ‘Pop’ move with energy and feeling, full of spontaneity and spark, while those in ‘City’ show structure, texture, and quiet refinement. Together, they express the duality of Pop City – where creativity meets emotion, and every sip shows us a little more about who we are.”

The cocktails

From Pop, guests can sample Strawberry Love Punch, which blends Roku Gin with strawberry, basil, and Sherry. The cocktail evokes the ‘dreamy nostalgia of Mariya Takeuchi’s song ‘Plastic Love’.

Meanwhile, Tokyo’s nu-jazz scene is the inspiration behind Nu-Paper Plane, which reimagines the modern classic cocktail with sansho pepper and Maker’s Mark Bourbon.

The bar is best represented in the City section by the Pop City Sour, described as ‘a portrait of the bar itself’. The drink layers Hibiki Harmony Whisky, sour plum, and purple shiso-infused Cocchi Americano.

The Sakura Bamboo pairs Roku Sakura Gin and bamboo-leaf infused Haku Vodka with sakura vermouth.

As well as the two core menu sections, Pop City will offer an evolving series of cocktails inspired by Japan’s 24 solar terms, called Seasons in Motion.

Two seasonal cocktails will be released each month. For the bar’s launch, it has created the Fuji Apple & Oyster Leaf Fizz, representing the heavy snow season, and the Shiitake Mushroom Negroni for the winter solstice.

“The beauty of Seasons in Motion is that it’s always evolving,” added bar manager Sylvia Chong. “Every month, we have the freedom to experiment and respond to the moment, be it in the produce we find or even the mood of our guests. It’s about creating spaces to express, discover, and feel inspired through flavour and connection. Every cocktail carries that same spirit – alive, changing, and full of heart.”

Pop City will offer a daily Happy Hour from 5.30pm to 8pm, when drinks will be priced between SGD$15 and SGD$17 (US$11.60-$13). Four cocktails will be available, including the Shibuya-Hi and a Yuzu Whisky Sour.

The bar also offers a range of Japanese-inspired snacks, including mochi cheese nuggets with miso curry sauce, and uni and corn croquettes.

The space

The bar’s interiors are a ‘reflection of Jigger & Pony Group’s decade-long journey in shaping cocktail culture in Asia’.

Its entrance is through a fire-escape staircase, with the venue offering several zones, each with its own ‘tone and tempo’.

The Byōbu Bar is named after Japan’s traditional folding screen. A hand-painted and embroidered byōbu serves as the bar’s backdrop and pays homage to Japan’s 24 seasons.

Meanwhile, Tasting Commons is ‘open and convivial’. The space is adorned with vintage Japanese vinyl in a tribute to the late 1980s.

As its centrepiece, the bar offers a display countertop filled with whisky. This area doubles as a standing area for guests, as well as turning into a DJ stage on selected evenings.

Tasting Commons’ furniture comprises real mid-century pieces by Danish future architect H Brockmann-Petersen.

Pop City also offers an ‘intimate nook’ called Bar Mixtape, inspired by the ‘charm of Tokyo’s pocket-sized bars’.

The space is designed for intimate groups or ‘focused listening sessions’, surrounded by shelves lined with whisky and CDs. Guests can listen to music on the limited players available at the bar

Bar Mixtape also functions as a whisky experience room.

The final area is the After Hours Salon, which is designed to be a ‘refined yet relaxed’ setting for conversation and nightcaps, ideal for guests want to unwind after work or dinner.

Modular tables shift to suit groups of all sizes, while Japanese design touches abound. These include zaisu-style seating, kimono fabric-inspired textile banquettes and a custom chequered wall covering, similar to Japan’s Ichimatsu design.
