Revery Bar bases cocktail menu on daydreams
By Lauren BowesThe cocktail bar at the London Hilton on Park Lane has released a new menu called The Daydream Collection.

The menu is ‘designed for those who dream with their eyes open’ and aims to capture ‘the moods of a mind at rest but never still’.
The list features five chapters, with the first, Jet‑Lagged Fantasies, transporting drinkers to various destinations. Le Rêveur cocktail takes guests to France with its mix of Grand Marnier, Lillet Rosé, grapefruit oleo saccharum, orange blossom, and Pommery Brut Royal Champagne.
Meanwhile, coastal Mexico is the inspiration for Destino Desconocido. The cocktail features Patrón Silver, mango and pineapple shrub, citrus and a chilli tincture. Stillness in Motion evokes a sakura‑lined bullet train ride in Japan, with Four Fox Sake, Roku Gin, ume vinegar and kumquat oil.
Chapter Two is titled Half‑Remembered Dreams and taps into nostalgia through serves like Pocket Money. This combines Havana seven‑year-old rum, St-Germain liqueur, Green Chartreuse, matcha, soda water and VG cream.
Off Limits aims to ‘capture the rush of youthful rebellion’, with Del Maguey Vida, Cynar, Cocchi Vermouth, tomato, and a blend of herbs and spices.

Next up is Chapter Three: Somewhere Between Love & Lust, which is inspired by ‘romance’s shimmering edges’. Kissed in the Tropics recalls summer flings with coconut‑infused Bombay Gin, banana liqueur, coconut water and CO2. Meanwhile, Typing… aims to recreate the butterflies of early dating with Belvedere Vodka, Cocchi Americano, hibiscus, and pineapple.
The penultimate chapter is titled In Another Life and ponders ‘what if?’. Now I See evokes clarity and reflection, blending Mermaid Gin, pomme verte liqueur, carrot, maple verjus, grapefruit‑bergamot soda and parsley tincture.
The Self Edit, the final chapter, invites ‘introspection and gentle transformation’ through non-alcoholic serves like Social Alchemy. This cocktail blends Sentia Gaba Gold with tarragon‑mango cordial and citrus.
Revery Bar opened in October 2023 following a major refurbishment of London Hilton on Park Lane.
